- 2 cUps all-purpose FLOUr - 1 teaspoon baking Powder - 1/2 teaspoon baking soda - 1/2 teaspoon salt - 1/2 cUp butter, sofTened - 1 cUp white sugar - 2 egGS - 1 teaspoon almond extract - 1/2 teaspoon coconut extract - 1 cUp buttermilk - 1/2 cUp flaked coconut - 1/2 cUp sliced almonds
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and FLOUr a 9 inch round cake pan.
2. In a medium bowl, sift together the FLOUr, baking Powder, baking soda, and salt.
3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egGS one at a time, then stir in the almond and coconut extracts. Beat in the FLOUr mixture alternately with the buttermilk. Fold in the coconut and almonds.
4. Spread the batter into the prepared pan.
5. Bake for 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Let cool in the pan for 10 minutes, then Turn out onto a Wire rack and cool completely.
